1- Audio cuvée – How winemakers age a Terrasses du Larzac wine – Jonquières

With this first episode, close your eyes and imagine that you are in Jonquières (postcode 34725), where nature and vines interlace at the heart of the appellation Terrasses du Larzac. Here, the vines rub shoulders with olive trees and garrigue at the foothills of the Larzac plateau, which at its highest point is dominated by Mont Saint Baudille, the sentinel of the appellation. The cultivation of vines and olive groves in the Mediterranean garrigue results in diverse habitats rich in biodiversity.

Thibaut Rodriguez, from the Conservatoire d’Espaces Naturels d’Occitanie, explains how such varied ecosystems are vital for agriculture.

With Oliver Jullien, immerse yourself in the history of these different grape varieties grounded in local history, and which are specified in the appellation's technical specification. A handful of other grape varieties have been brought in from other regions too. Whether Grenache, Syrah or Mourvèdre, these grapes are the symbol of different cultures blending together. To conclude this episode, Olivier Jullien describes in detail the tasting of his emblematic wine "Lous Rougeos", produced from this revitalised and enchanted terroir.
