Winegrowers in the Terrasses du Larzac AOP are refining their understanding of the geology of their terroirs
For the past two years or so, the AOP Terrasses du Larzac association has been working with the support of Luc David, a geologist and, amongst other things, a member of the scientific advisory board of the Terres d’Hérault Geopark. The aim of this work is to gain a better understanding of the various geological structures that form the basis of our terroirs. By understanding them better, we can better understand how and when they were formed, and also ensure we all use the same terminology when discussing them.
All the subsoils within the appellation are of sedimentary origin. However, they date from across the four geological eras. Lacustrine and marine limestones; clay-limestone; fluvial terraces (from which our appellation takes its name) from the Hérault or the Lergue, or even from smaller watercourses; rounded pebbles and frost-cracked stones.
This diversity allows each winegrower, by experimenting with blends of at least three grape varieties from a range of nine, to create AOP Terrasses du Larzac wines that reflect their own style whilst remaining true to the product’s distinctive character – the very foundation of the AOP – characterised by the following key attributes: freshness, elegance, supple and silky tannins, finesse and depth.
