For the past two years, the Terrasses du Larzac AOP syndicate has been working with geologist Luc David to deepen its understanding of the rich and varied geology of the appellation’s territory. The sedimentary subsoils of the appellation’s terroirs were formed at different points in geological history: every geological era is represented there.
